Kona Brewing Hawaii has an immediate opening for a Sous Chef in Kailua-Kona, HI. The position supervises the production, preparation and presentation of all foods for the pub to ensure that a quality, consistent product is produced that meets KBH standards, as appropriate in order to achieve guest satisfaction, quality service, compliance with Kona Brewing Hawaii policies and procedures and federal, state and local regulations while meeting/exceeding financial goals.
Specific job duties:
Support the company's Statement of Purpose and Values.
Support company's best practices for safety initiatives and OSHA compliance. Supports safety programs, polcies, and procedures.
Plans and directs the production, preparation, and presentation of all foods for the pub as assigned by the Head Chef to ensure that a quality, consistent product is produced which conforms to all company standards.
Monitor and control the maintenance/sanitation of the kitchen and equipment to ensure a healthy, safe work environment which meets/exceeds federal & state standards and regulations.
Monitors and controls labor and food costs through scheduling, training and supervising the production of the food to ensure budgets are met/exceeded while quality is maintained/improved.
Shifts will vary from day to night shifts and must have the flexibility to fill shifts when needed.
Train, lead and supervise staff.
Carry out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.
Place product orders with adherence to set par levels for ordering.
Position requirements:
Minimum one year of post high school education, preferably at Culinary Institution.
2+ years of employment in a related position in a high volume restaurant
Requires advanced knowledge of the principles and practices within the food profession. This includes experiential knowledge required for management of people and/or complex problems and food and beverage management.
Ability to work effectively under time constraints and deadlines.
Ability to follow kitchen systems for ordering, scheduling, recipe preparation and food plating.
Must have the ability to communicate in English. Serve Safe Certified is a plus.
